Kids are hungry all the time, but they are hardly hungry for healthy food. Trying out new dishes also becomes a challenge for many parents.
One thing is for sure, though. Kids love cheese. They can eat anything covered nicely in cheese. Knowing this, I wanted my kids to eat bell peppers. So, I made them a healthy plate of Mushroom and Bell Pepper Poppers. The plate was licked clean in seconds!
20 – button mushrooms
½ cup – diced yellow and red bell peppers
1 cup – shredded mozzarella cheese
1.4 cup – melted butter or olive oil
Salt and pepper to taste
Step 1:
Clean the mushroom and remove the stems
Step 2:
In a bowl, mix diced bell peppers, cheese, salt and pepper. If you want you can also add sweet corn to the mix.
Step 3:
Take a small quantity of the mix and put it inside the mushroom.
Step 4:
Take a skillet and pour some oil in it. Once the oil is hot, place the mushroom with stuffing facing up. Cover with a lid. Let it cook for not more than 2 – 3 mins. Once you see the cheese melting, take the stuffed mushroom poppers off the heat.
Note: You can serve it with mayo chilli sauce. Just add 1 tsp chilli sauce in 2 tsp of mayo and mix it.
The melting cheese and the goodness of mushrooms will surely tempt the eyes. Use this mushroom recipe to experiment with the vegetables and make your child fall in love with veggies again.
